Cheesy Jalapeno Deviled Eggs

I can never bring myself to making traditional deviled eggs anymore. As an avid gardener, I have a million options to use when preparing food. And I certainly try my best not to let anything go to waste!

I can’t quite remember how I started going all out in modifying my deviled eggs. It’s been a long time. But I can say, they are always a hit at parties.

There is something about that surprise crunch and that burst of unexpected flavor. It’s complete yumminess!

So without further ado, here is one of my many versions this particular recipe –The Cheesy Jalapeno Deviled Eggs!

Ingredients

  • 6 hard boiled eggs

  • 2 tbsp chopped white onion

  • 1 tbsp yellow mustard

  • 2 tbsp chopped and seeded jalapeno

  • 3 tbsp mayonnaise

  • 4 tbsp sharp cheddar cheese grated

  • ¼ tsp smoked paprika

  • salt and pepper to taste

Directions

  • Add eggs to boiling water for 12 minutes. Rinse and let cool off.

  • Peel and halve eggs. Remove the yolks and put them in a mixing bowl. Set the egg whites aside.

  • Combine yolks with all ingredients (optional: set aside some additional jalapeno and cheese to use as a topper) and mix thoroughly.

  • Spoon the mixture into each egg white and top with extra cheese and jalapeno.

  • Can be served immediately or refrigerated and served later.

  • Enjoy!
