I struggle with making my lunch for work at times. I go through phases where I refuse to bring anything in containers simply because I don’t want to look at them again after I get home.
This way of thinking leads to sandwich after sandwich after sandwich. . . It gets old—but on the plus side there are no dishes to be done at the end of the day!

I recently decided to change things up by making wraps to take for lunch! It worked out wonderfully and there were still no dishes! Wraps are definitely my next go-to for my work lunches or even just a quick snack at home!

When figuring out what would go inside the wrap, I was determined to keep it super healthy yet tasty! This is what I came up with!
Ingredients
1 ¾ cup of water
1 cup of quinoa
Juice of one lime
3 tbsp of cilantro chopped
12 cherry tomatoes sliced
5-6 tbsp of feta cheese
1 avocado sliced
garlic salt to taste
6 medium sized flour tortillas
Directions
Boil the water and then add the quinoa. Cover and simmer for 10 minutes. Then fluff with a fork.
Add all of the ingredients except for the avocado and mix.

Put a few tablespoons of the mixture onto one end of a tortilla and top with a few small slices of avocado
