Garlicky Tomato Sandwich on Rye

In a hurry and still need to go grocery shopping? Food in the kitchen starting to get thin? I have a quick and easy sandwich recipe to recommend.

I use a creamy mayo based spread with garlic, basil and garlic salt and smother it on toasted rye and fill it up with sliced tomatoes. Soooo delicious! The mayo mixture is great on other kinds of sandwiches too. As an avid gardener, tomatoes are often my sandwich filling of choice simply because I end up with so many of them over the summer!

So this is how it’s done!

Ingredients

  • 2 slices of rye bread (or any other bread of your choice)

  • 4-5 tbsp of mayonnaise

  • 1 clove of garlic finely chopped

  • ½ tsp of garlic salt

  • 6 small basil leaves chopped

  • 1 roma tomato sliced

  • optional: your choice of cheese

Directions

  • Start by lightly toasting your bread.

  • While the bread is toasting, mix together the mayo, garlic salt, garlic and basil.

  • Once the bread is ready, smother the face of each slice with the garlic spread.

  • Add tomatoes and optional cheese, put the slices together and cut in half.

  • Enjoy immediately!
